Let me preface this recipe by saying that I love cooking things in “packets.” I think it’s an easy, convenient and delicious way to prepare meals. That being said, I just “invented” Cilantro Lime Perch and definitely will be hanging on to this recipe.
Preheat oven to 400°
Lay out a sheet of aluminum foil on a cookie sheet and spray with non-stick cooking spray.
Slice onions and mince a clove of garlic.
Place onions and garlic on aluminum foil.
Place defrosted perch (or fish of your choice) on top of the onions and garlic.
Slice half a lime and chop up a small handful of cilantro (more or less, depending on how much you like cilantro).
Place lime and cilantro on top of fish.
Roll up all four sides of foil, creating a little packet.
Place cookie sheet with packet in pre-heated oven for 20 minutes.
Light some candles, pick up a book book and enjoy a cup of tea while you wait for your fancy schmancy dinner to come out of the oven. You’ll be smelling the yumminess in no time.
When done, remove from oven and let cool for a minute or so. Unwrap your packet and enjoy the delicious scents wafting from the food.
Place food on plate and serve with your choice of side. I chose mixed steamed vegetables.
